Simple school bus cake recipe

If you kid can’t wait to be on a real school bus to start kindergarten, you can make them a school bus-themed birthday cake.

Ingredients

  • 1 cup butter, softened
  • 1 package yellow cake mix (regular size)
  • 1 cup shortening
  • 2 yellow gumdrops
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 6 red gumdrops
  • 2 teaspoons black paste or gel food coloring
  • 1/4 cup milk
  • 8 to 9 cups confectioners’ sugar
  • 1/2 to 3/4 teaspoon yellow paste or liquid food coloring
  • 2 Oreo cookies, cut in half

Directions

Follow the package directions for making the cake mix. Pour the batter into two 8×4-inch loaf pans that have been oiled.

Preheat oven to 350°F and bake for 40-45 minutes, or until toothpick inserted in middle comes out clean. Cool for 10 minutes in the pans before transferring to a wire rack to cool fully.

Place the cakes end to end on a covered board about 22×8 inches. If necessary, adjust the level. Cut out a chunk 1 inch deep and 3 inch long from the top of one end to form the front of the bus (Save the removed piece for another use.)

To make the frosting, cream together the butter and shortening in a large mixing bowl until frothy. 6 cups confectioners’ sugar, milk, vanilla, and salt, whisked together until creamy. Add enough residual confectioners’ sugar to achieve the desired consistency.

Set aside 3/4 cup frosting tinted with black food coloring. Remaining frosting should be tinted yellow. Using yellow frosting, frost the top and sides of the cake.

To make the wheel wells, ice the cut edge of the cookies with yellow frosting and lay two cookie halves on each side of the bus.

Insert a #5 round tip into a small hole cut in the corner of a pastry or plastic bag. Fill the bag halfway with black icing. Pipe strips under windows on both sides of the bus; outline windows on both sides of the vehicle.

Fill up the gaps in the windshield and back window with black icing. Front of grille has pipe lines. Place yellow gumdrops for headlights on the front of the bus, and red gumdrops for lights on the front and back.
